Ingredients for 3 pizzas:
250 g Manitoba flour
250 g all-purpose flour (00)
300 g water
10 g salt
10 ml extra virgin olive oil
1 packet of yeast
For the topping:
200 g tomato sauce
240 g mozzarella
150 g sautéed mushrooms
280 g pumpkin purée
2 sprigs of parsley
Instructions:
Dissolve the salt in water. Pour the flours and yeast into the Pastaio Elegance di G3 Ferrari stand mixer by G3 Ferrari and start kneading at speed 1, gradually adding the water. Once combined, add the oil.
Shape the dough into a ball and let it rest for 2.5 hours in a greased bowl, covered with plastic wrap.
Divide the dough into three parts and let them rise for another 40 minutes on a tray sprinkled with semolina.
Preheat the oven to 300°C (level 2.5), stretch the dough by hand, and add the tomato sauce and other toppings.

550 g mixed ground meat (pork and veal)
Salt and pepper to taste
40 g grated cheese
2 eggs
1 garlic clove
200 g stale bread crumbs
1 tablespoon chopped parsley
For the sauce:
500 g tomato passata
40 g extra virgin olive oil
30 g chives
Instructions:
Soak the bread crumbs in water or milk, then chop them together with parsley and garlic.
Mix all the ingredients in the Pastaio Elegance stand mixer and knead for 5 minutes.
Shape the mixture into meatballs and preheat the oven to level 2.
Heat the tomato sauce for 3 minutes, add the meatballs, and cook for 4 minutes, turning them halfway through.
